OK, they have a a lot a vitamin C Couple other fruit items that have a lot of Vitamin C. Melons and tropical fruit, papayas and pineapples. Very good choice of vitamin c. Swinging over to vegetables, some vegetables contain very high amounts of vitamin see. Broccoli, cauliflower, greens such as collard greens, mustard greens, and kale, all very high in vitamin C. And the highest amounts of vitamin C are found in peppers, red bell peppers, green peppers, hot chili peppers, enormous amounts of Vitamin C, even more than in the citrus. So there, now you know where to get good vitamin C Turning to market conditions, it's a good week for vegetables. Prices are down in general on everything. Broccoli's down, cauliflower is down, head lettuce is down. Very good. Higher priced items only in the vegetables are zucchini and green peppers. They're up this week. Everything else, very reasonably priced. Over in the citrus department and fruit department, I said citrus, because citrus is very good this week, oranges, grapefruit. All very, very reasonably priced, so it's a really good week. Finally, chives are in now. You take these, they come in a pot, you plant them outside. They'll propagate by themselves. Please don't watch. You just snip off the tops. You've got fresh chives all year round. You can freeze them. They're wonderful things. Fresh chives. And finally, Artichoke's capital is Castroville. I'm gonna tell you about produce selection. I really believe that your end results of your meal has something to do with what you put into it. So I'm to help you select good produce. This week we're going to concentrate on vegetables. Let's take a look. OK, and lettuce. You want to make sure your head is nice and firm, fairly solid, good weight, no rust around it, good head of lettuce. Broccoli and cauliflower. Broccoli. You want your buds to be nice and tight. You don't want to see any yellow or black, for that matter. And your stalks, not too thick. Now, you can eat the stalks. They can be peeled, and you can cook them. Or you can use them as a soup stock. They're really wonderful. So a thick stalk doesn't necessarily bad, but it is better to have thin stalks Cauliflower, you want to have a nice firm head. You don't want to any yellow, or any black spots on it. The wrapping, they wrap all the California cauliflower. That's just the way they do it. Nice way to it again. Zucchini, cucumbers, You want them to be nice and firm. Sometimes they'll come in shiny, the cucumbers, because of the wax in the wintertime. No soft spots. Feel the tips of it. See if they're firm. If they're firmed, it usually means they're going to be good. Carrots, again, nice color. When your carrot starts to get old, you can see this one here. The tip starts to rot. That's where they go bad first. Peppers, nice, solid, firm green pepper. Again, look around the stem for soft spots, that's where the occur. People have a lot of problems picking eggplant. OK, what do we look for? We look for color. You want to have a nice purple luster. You don't want to see any brown spots, discoloration. That means the eggplant's getting soft. You feel around the stem. And you can see this eggplant has a little soft spot developing right there underneath the stem, the rest of the eggplant is good. This probably part will have to cut out. Also, nice weight. Eggplants tend to get spongy. They don't have a good shelf life in a store. So eggplants, you've got to be very careful. Other things. Well, you can save money on potatoes. If you're going to make mashed potatoes or something, buy the small potatoes. They're 10 cents a pound. You buy a baked potato, excellent for baking, but they're 30 cents a pound. If you are going to cut them up, buy a small potato. Tomatoes on the other hand you want to buy a larger tomato a larger. Tomato will give you more flavor That's just the way the tomatoes work. They're more money, but you do get more flavor onions Well red white yellow one is they're all in season right now If you're gonna cook with an onion go ahead and use a yellow onion because cooking takes the heat out of the onion And so it doesn't matter what color onion you use However, if you're going to serve the onion raw or in salad or put it on a sandwich You might want to go to a redder white because they are milder finally avocados most interesting fact about Avocados is that the pit on a small avocado is going to be the same size as a pit on the large avocado Strange but true. Trust me. I know what I'm talking about. So always buy a large avocados you get more for your money So I've helped you with this week's meal, next week I'm going to tell you about selecting fruit. This week the fruit and vegetable market kind of reminds me of a series of Clint Eastwood movies. I mean, we've got the good, the bad, and the ugly. Let's look at vegetables and I'll explain. The good, well, broccoli, very good buy out of California. Carrots out of California, also a good buy. In fact, most of your California produce, with the exception of lettuce, which is the ugly, meaning it's been getting a lot of rain down there, I think you know that. And you can see what's happening to the leaf lettuce. It's coming in very, very wet with a lot of water damage, and it's not all that good. On the other hand, the head lettuce has survived this weather, and it is not too bad. So it's kind of the good also. The bad. Well, the bad news is vegetables out of Mexico, Texas, have really gone up in price. Zucchini, red bell, green bell peppers. All very, very high right over well over a dollar a pound. You're gonna need a fistful of dollars to buy some peppers Tomatoes also kind of ugly and kind of expensive this week out of Florida and Mexico very very high priced Swinging over to the fruit department kind of a dull week for fruit bananas are up this week They were cheap, but they are more expensive now They're a little in shorter supply, but citrus is still very good oranges and grapefruit highlight Apples. You notice you didn't see a lot of golden delicious apples around. Weren't very good this year. We've got a new apple, it's a Criterion. It's a cross between a golden and a red. It's got the texture of a red and tastes more like a golden. It's an excellent apple. I suggest you try it before the season's over. It's called a Critarian Apple. Finally, a couple specialty items for the Chinese New Year. You're going to have sugar peas or Chinese snow peas running about $2.50 a pound. And there are some Chilean grapes and nectarines coming in now. They're very expensive, and the quality is questionable. So there you have it for eyewitness news. Happy Valentine's Day. I'm Terry Potassium.
text/plain
https://uoregon.aviaryplatform.com/collections/1635/collection_resources/70527/file/156473#t=1846.71,1952.83
https://uoregon.aviaryplatform.com/collections/1635/collection_resources/70527/file/156473/transcript/86777/annotation/77
Speaker 15: Houses of worship have long enjoyed special status with the tax collector. This week, Portland State Representative Vera Katz introduced legislation to limit that exemption. Katz says nearly 1.3 billion dollars worth of property is given charitable status in Oregon. Katzz proposes that exempt organizations begin paying for police and fire services. Her legislation would not apply to the actual building used for worship or to church-sponsored schools. It would not require charitable or religious organizations to pay for anything but police and fire services. As expected, some but not all churches in the state have objected to the bill.
