And if you have an hour or even half an hour, pull off Highway 101 north of town for a free, self-guided tour of the plant. For starters, visitors can get some background on the history of Tillomook County and its extensive dairy herds. The curious can even sidle up to a replica of Old Bossy to learn how milk is produced. Pretty soon, most visitors head upstairs to the viewing galleries for a look at cheesemaking room. Here, huge vats hold up to 25,000 gallons of milk, milk that's gradually congealed to form curds, which are then cooked to separate the liquid whey. Those curds are pressed into 40-pound blocks of cheese, huge slabs that are shrink-wrapped before they're stored in the creamery's warehouse for aging, three months for medium cheddar, 15 for extra sharp. The noise was a bit overwhelming when I stopped by on Sunday, but when I returned with a camera on Monday, things had cleared out a bit and it was a lot easier to get around and try out the displays. Admission to the museum is $6.50, and while you're there, you should plop down a couple of dollars more to get into the new OmniMax theater. It features a top-of-the-line projector and sound system and a wraparound screen. And through March, OmniMAX is playing Ring of Fire, a 40-minute film about earthquakes and volcanoes.
