Today I'm going to tell you all a little bit about fresh herbs. Now, not the kind of fresh herb that you might find at a fast food restaurant, and not the kinda fresh herbs that may get you into some kinda trouble, but the kind fresh herbs you can use to really enhance your meal. Now there are two or three that I want to talk about in particular today. First is sweet basil. Now medieval physicians used to believe that the mere scent of sweet basil would cause scorpions to grow in your brain. I've got no scorpions in my brain. I breathe sweet basil all the time. Sweet basil's most popular use is in making a pesto sauce. A pesto source consists of sweet basil, parmesan cheese, olive oil, pine nuts primarily. And it's a wonderful sauce that goes on pasta dishes. Sweet basil is a member of the mint family, which brings us to mint. Now mint is a great herb. It's used as a sweetener. You can make mint tea, mint jelly. It's wonderful with lamb and poultry and fatty meat. That's mint. So mint is in season right now also. The third herb I want to tell you about is a salad-grain type herb. It's called arugula. Now the French word for that is roquette. The English word for it is rocket. And I think it got its name rocket because of the shape of the leaf. You can see it kind of looks, not much, but it does kind of look a little bit like a rocket, although this won't fly. Arugula is a wonderful addition to salads. It is very similar to watercress. It was a member of the mustard family. And what you want to do with arugula is mix it with lettuce and some olive oil and some spices and you get a really nice spring summery salad. A sure way to spice up a summer meal is with the addition of good fresh herbs. And the herb season is upon us now from May through September. They're all coming in now. And if you have any questions, make sure you ask your local produce person on which herbs are best for which use. So herb season's here and you really spice up your meal, spice up you food.
