The April showers bring May flowers. Pay your taxes, then relaxes. After Passover and Easter, life gets easier. These are just a few of some potassium sayings that I brought forth for today. And you know, fruit and vegetables are getting easier, particularly in the vegetables. And today I want to tell you about the artichoke phenomenon. Now, eight weeks ago, artichokes were fifty dollars a box, that comes to about four dollars a piece. Today, artichokes are on the market for about three for a dollar, and they're even going to go lower. The reason is, well, a couple years ago they had some problems with the artichoke crop. They had some cold weather and some wet weather, had a lot of damage. Now they're making the comeback, and it just goes to point out the real difference in how vegetable and fruit prices can really fluctuate. You never see roast beef being $20 a pound one week and two dollars a pound the next week. But in vegetables, you will see that kind of fluctuation. Anyways, artichokes this week, an excellent buy. And a way to prepare artichokes. If you take your artichoke, snip off your bottom, snip off a little leaves on the top, you gotta cook them thoroughly. A large artichoke can take as long as 40 minutes to cook. They're delicious, you can serve them hot or cold. And where you get your calories is when you eat the mayonnaise and the hollandaise sauce. But otherwise, artichokes are delicious, and this is really the time to try them. There are a lot of good values on the vegetable market this week. Locally, we're seeing some first things coming in radishes and green onions. Out of Washington, asparagus coming in. Very good buys on all this stuff now. Out of California, broccoli, an excellent buy. 49, 59 cents a pound. Very, very good. Also, Salad greens out of California, excellent this week. Lettuce, spinach, all kinds of greens, again, 49 cents range. There are some high price items. Out of Florida, we're seeing higher priced tomatoes, about a dollar a pound. Mexican tomatoes are about finished up, so expect to see some high prices on tomatoes. And I told you last week about onions. The onion crop out of Texas, very good quality, but some higher prices, 59 to 69 cents a pound on onions. So all in all, it's a very good week for vegetables. On the other hand, fruit, not much moving in the fruit. It's too soon for the California tree fruit to come on. The apples are coming out of storage, like I told you, they're about 59 to 69 cents a pound. So this week it's a great week to concentrate on vegetables. Have a good safe holiday for eyewitness news. I'm Terry Potassium.","format":"text/plain"},"target":"https://uoregon.aviaryplatform.com/collections/1635/collection_resources/70722/file/156670#t=2170.37,2303.799"}]},{"id":"https://uoregon.aviaryplatform.com/collections/1635/collection_resources/70722/file/156670/transcript/87541","type":"AnnotationPage","label":{"en":["English [Transcript]"]},"items":[{"id":"https://uoregon.aviaryplatform.com/collections/1635/collection_resources/70722/file/156670/transcript/87541/annotation/95","type":"Annotation","motivation":"subtitling","body":{"type":"TextualBody","value":"https://d9jk7wjtjpu5g.cloudfront.net/file_transcripts/associated_files/000/087/541/original/trint_Coll427_0573_transcript.vtt?1765473412","format":"text/vtt","language":"en"},"target":"https://d9jk7wjtjpu5g.cloudfront.net/file_transcripts/associated_files/000/087/541/original/trint_Coll427_0573_transcript.vtt?1765473412"}]}]}]}
