Certainly, it's dangerous in its way. It's not quite beading, I'd think, but in its It's dangerous. It's also an art in the sense that most of these recipes are traditional and have to be created in a traditional manner. The idea is that the flame does one thing, it burns the alcohol off the liquor and allows the flavor to remain. So you do get the flavor. That's precisely why it's done.
