The broccoli plants, the little starts you get. Cauliflower plants will do real well if you put them in the ground this time of year. One thing you want to keep in mind, don't put the vegetables and broccoli in the same place you had them last year. For me, it's pretty obvious where they were last year, I've been picking stuff off of here all winter long. Some of the plants may have used up all the nutrients in the soil. Maybe there's some diseases or some sort of bugs that really like broccoli. So what we're going to do is move one bed over here. And then putting in these starts is pretty simple. Just pop them out of the ground. I prepared this soil already. I put a little compost in here. You might bury the plants in just a little bit deeper than they were in the container, and they won't tend to tip over. And then the last thing I like to do to mine is put a tiny greenhouse over them. That way they get a little bonus start, a little extra warmth. I'm the chef at Bakari Restaurant. And this evening, we're gonna make ling cod with sage, prosciutto, and shiitake mushrooms. And here we have the ling cod, approximately a six ounce portion. And we're going to take that, and at the end of a lemon, just squeeze on a little lemon juice. A little salt, preferably sea salt, and some fresh ground pepper. Then we're going to take the prosciutto. And lay one slice in there with a little sage, chopped sage, finely chopped, and then just roll this up. We'll take some more prosciutto. And sort of wrap it around the outside. Okay, and then we're ready to put the ling cod into the pan with the fish broth. Approximately four ounces of fish broth, shiitake mushrooms. And finally the cod and set that in warm that up a little bit. And then you can send it off to a 350 degree oven for approximately 20 minutes. Okay, now we're ready to prepare the sauce. We can make the sauce in the pan that was in the oven. We just remove the fish and we'll add about two ounces of cream. Or one could use half and half. We reduce that for. Until it's to a saucy consistency, which is approximately one minute on a medium flame. You could add a little sage to that. A little salt and two turns of the pepper mill. Now we're ready to plate the fish. And the sauce has reduced nicely. And garnish with a sprig of fresh sage.
