The avocado industry that we have, and we have a big avocado industry in Southern California, was started around the turn of the 20th century. Avocado, because of their physical makeup, go well with either fruits or vegetables. There are a few varieties of avocatoes, but the best variety are called the Hass Avocados. Avocados were known as alligator pairs. And although they are not related to pairs at all, I believe the reason they got that name is because of one, they're shaped very much like a pair. And two, their thick skin kind of reminds you of an alligator or a crocodile. So they could have been alligator or crocodile pairs. When selecting avocados, greenhouse avocadoes will be green and firm. As they ripen, they turn black. They don't shrink. They just turn a little black. And they begin to get a little soft. Then you have a nice, ripe avocado. If you buy green avocados and want to ripen them, put them in a nice warm place where they get some sun and they'll ripen in a day or two. Avocados aren't dietetic. An average avocado has about 250 calories, but you can enjoy them many ways. They're great making guacamole dip, great in salads, great as a main course because, like I say, they have a lot of protein, and you can also enjoy them as a sherbet or in a dessert for ice cream.
