The best horses were those that could separate and hold a steer out of the herd, a technique known as cutting. Well, the West has become a bit more tame. Trucks have replaced horses to a large extent on the wide range, and cutting has become competitive sport. Now a rider is given a two and a half minute time slot to cut out a cow. The horse must be able to both give and take control, which is kind of tricky. At the start, the rider runs the show, selecting a cow while the horse is queued a step at a time.
